banana bread


I have to warn you that this is not one of the healthiest breads out there, but it is the BEST banana recipe that I’ve found so far. It is soooooooo good. Easy to make, great for breakfast, and everyone loves it!

-Here’s the recipe-

Mix together:
1/3 Cup Oil
3/4 Cup Granulated White Sugar
2 Eggs
1 tsp Vanilla
4 Ripe Bananas, mashed by hand
add 1/2 Cup Chopped Walnuts

In separate bowl, mix together:
1 1/2 Cups White Flour
3/4 tsp Salt
3/4 tsp Baking Soda
3/4 tsp Cinnamon

Toppings before baking:
1/2 Cup Coconut Flakes
sprinkle Ground Cinnamon
Sprinkle Ground Nutmeg

Preheat oven to 350 degrees.

Mix the wet and dry ingredients separately, then pour the flour mixture into the banana mixture and stir until combined. Pour into greased, floured pan (about 9″x 5″). Sprinkle cinnamon and nutmeg on top, then press coconut onto the top until it adheres to the dough for bonus deliciousness before baking : )

Bake time is about 1 hour 15 minutes, but check it a bit sooner to make sure it doesn’t over-cook. Once the coconut looks golden brown, put tin foil over the top and continue baking (this is usually at the 45 min mark) so that it doesn’t burn.
