Creamy Coconut Kale

Want a quick and easy way to get your leafy greens? Try this individual preparation of deliciously creamy coconut kale. By the way, kale is high in magnesium, which reduces lactic acid build up post-yoga (diminishing muscle soreness), supports your immune system, reduces inflammation, boosts heart health, reduces risk for diabetes, and wards off depression and migraines. Yes please!

CREAMY COCONUT KALE (1 serving) – Total Time: 15 minutes – Equipment: sauté pan

4-5 leaves of kale, any kind works

¼ onion, sliced

7-8oz full fat, unsweetened coconut milk 

salt & pepper 

De-stem the kale by pulling the leaves from the tough stems and tear into pieces. Heat coconut oil over medium heat in a sauté pan and add the sliced onion. Cook onion 3-4 minutes or until it begins to brown.  Add the kale and ¼ cup of water and cook 1-2 minutes or until kale is wilted. Season with salt and pepper and then add coconut milk and cook 3-4 minutes or until slightly reduced. Season with salt and pepper again if needed.
