08 Mar Easy Veggie Burgers
I love eating veggie burgers, but they are so time consuming, with multiple steps. The recipes are so challenging that I never make them at home….UNTIL NOW! I just ran across this recipe from Nourish and Strengthen. So easy and delicious!
Easy Veggie Burgers:
2 cups cooked brown rice
½ cup nutritional yeast
2 cans of your favorite beans washed and drained (I used 1 can of red kidney beans and one can of white northern beans)
¼ cup salsa
¼ cup barbecue sauce
1 tsp onion powder
1 tsp garlic powder
Mix all ingredients in a bowl and mash with a potato masher. Form patties by hand, and use a hot, non-stick skillet to warm and toast. Serve on 100% whole grain bread and top with your favorite burger toppings like mustard, caramelized onions, grilled mushrooms, tomatoes, lettuce, etc. I love to add jalepenos on mine!!!
