
04 Oct Farro Jicama Salad
There’s a new grain in town. Well, new to most of us that is. The grain is called farro. I really love this wheat grain that tastes like a mix of barley and brown rice. There are so many things you can make with it, but one of my favorites is a quick and easy salad. I like to serve this salad buffet style. Start with a plate of farro and add your toppings.
Farro Jicama Salad
4 cups cooked farro
1 cup chopped jicama
1 chopped fresh jalapeño
1 cup chopped tomatoes
1 cup chopped bell peppers (choose your color or use a mix)
1/2 cup chopped parsley
Juice from one lemon
1/4 cup Fig Balsamic Vinegar
Cook farro as directed on the package and cool. Chop your favorite veggies like jicama, jalapeño, tomatoes, and bell peppers. Chop some parsley too. Serve in a buffet line. Grab a plate of farrow and choose your toppings. Top with fresh squeezed lemon juice and a fig Balsamic Vinegar. Sweet, sour, spicy, crispy, light, hearty, healthy, pretty, fast and so tasty! Enjoy!
