YOGI ON THE LOOSE – POWER SALAD

Quinoa

Baby Kale

Butter Lettuce

Cherry Tomatoes

Cucumber

Yellow Bell Peppers

Avocado

Feta Cheese

Toss with some Lemon Vinaigrette (I like Tessemae’s Lemon Garlic, you can get it at Ralphs)

A few Chicken Basil Parmesan Meatballs on top – recipe here

or

Vegan Style:  Use Chickpeas, a dollop of Hummus and toss in some Pine Nuts instead of Feta Cheese
